Forget Panera! Now this is lunch!

Looks good doesn't it!? I love Panera's Tomato Panini, I could eat it every day, so yummy. However I recently read about the bread and it's not as healthy as I want to eat. Besides it's kind of pricey, and I can do it at home. This is a great Summer sandwich to impress your lunch guests! :)

To make my Mock Panera Tomato sandwich you will need:
Good Whole Wheat bread
Fresh Ripe Tomatoes (Organic if you can)
Fresh Mozzarella (not the shredded kind but the nice fresh ball o' mozzarella)
Pesto Sauce- I have yet to make my own but for our area in Chicago Dominick's (or Safeway stores) carry a brand called "Open Nature" and the pesto sauce is good an no preservatives! Ingredients: Olive oil, cheese (Parmesan and Romano mix), Basil, Lemon Juice, Parsley, Garlic, Salt, Spice.

Get your bread and spread with the Pesto Sauce, top with sliced Mozzarella, and then the sliced tomatoes. I use a toaster oven open faced but you could use a paniei press or even toast on a grill.
